I've skipped a couple for roleplaying reasons that wouldn't've given me kills, like a new one near Deathknell to gather herbs to poison pumpkins (you get it after gathering the pumpkins), but I've also done a couple that kill NPCs, like one to destroy a tower in Azshara -- I expected it to be like earlier quests where a "destroy" animation is played and nothing else happens, but for this one, at least, NPCs fall out and "die".
